Finally Feeling the Christmas Spirit

Well, it took a little longer this year than years past, but I am finally excited about Christmas. Yes, the excitement has been building the past few days, but today it hit me full force. I’ve been humming Christmas songs, finalizing plans to visit people over the next few days, opening Christmas cards, finishing the goodies that I’ll be taking to family and friends. Today I finished up my baking: lemon meringue pies, tourtiere pockets, and a super cute tourtiere for Grandma and Audrey to share.

However, the thing that made me super happy today is probably one of the most trivial. I made the most perfect meringue for my pies. It was smooth, and glossy, and light, and held beautiful, soft peaks. I know. I’m a dork at times. When a food thing turns out, it can make my entire day.

And now, I will get myself organized and make sure I have everything packed and ready to go for the next couple of days. Goodies – CHECK! Presents – CHECK! Overnight bag – CHECK!
